Barley Salad with Grilled Vegetables

Ingredients
  • 180g cooked barley

  • 1 cup Broccoli florets

  • 1 red pepper finely sliced

  • 1 spring onion finely sliced

  • 200g mixed mushrooms slices

  • 2 celery sticks sliced

  • 1/2 cup vegetable stock

  • 1 tablespoon sesame oil

Method
  • Stir fry all the vegetables in the sesame oil and stock until softened.

  • When the vegetables are cooked add the barley and stir until all the ingredients are well mixed.

  • Top with toasted sesame seeds
