
Asian Prawn Salad

Ingredients
Bunch mixed salad, I used iceberg and rocket salad leaves
1 cup fresh peas
2 plum tomatoes , roughly chopped
1 cup cherry tomatoes, halved
1 avocado , sliced
bunch - parsley, basil, mint and coriander , finely chopped
2 cups fresh prawns, pan fried in sesame oil and garlic
2 Tbsp sweet chili sauce
2 Tbsp soy sauce
Method
Pan fry the finely chopped garlic in sesame oil until slightly browned. Add the Prawns and cook for 2 min on each side. Set aside to cool.
Meanwhile assemble the salad , by placing all the ingredients in a large salad bowl.
Mix the sweet chili and soy with the prawns and its juices until all the ingredients are well combined.
Add the prawn mixture to the salad and fold the dressing and prawns until all the salad is well coated with the juices.
