Asian Prawn Salad

Ingredients
  • Bunch mixed salad, I used iceberg and rocket salad leaves

  • 1 cup fresh peas

  • 2 plum tomatoes , roughly chopped

  • 1 cup cherry tomatoes, halved

  • 1 avocado , sliced

  • bunch - parsley, basil, mint and coriander , finely chopped

  • 2 cups fresh prawns,  pan fried in sesame oil and garlic

  • 2 Tbsp sweet chili sauce 

  • 2 Tbsp soy sauce

Method
  • Pan fry the finely chopped garlic in sesame oil until slightly browned. Add the Prawns and cook for 2 min on each side. Set aside to cool.

  • Meanwhile assemble the salad , by placing all the ingredients in a large salad bowl. 

  • Mix the sweet chili and soy with the prawns and its juices until all the ingredients are well combined. 

  • Add the prawn mixture to the salad and fold the dressing and prawns until all the salad is well coated with the juices.
