Autumn Poke Bowl

Ingredients
  • Bunch mixed salad leaves

  • 1 chicken breast , halved and cooked in olive oil

  • Bunch cherry tomatoes

  • 1 small can chickpeas drained

  • 1/2 cup dried cranberries

  • 1 avocado halved

  • 1/2 cup mixed, toasted seeds- sunflower seeds, pumpkin seeds, sesame seeds

  • 2 cups roasted pumpkin, cubed

For the dressing

  • 1Tbs extra virgin olive oil

  • 1 Tbs sesame oil

  • Juice of 1 lemon

  • 1 Tsp maple syrup

  • 1 Tsp dried oregano

Method
  • For the dressing , mix all the ingredients until well combined. Set aside

  • Half the chicken breast , season with salt and pepper and pan fry in a non stick pan until golden on the outside and cooked through. Let it cool and slice thinely 

  • Chop the pumpkin in cubes and roast in a lined baking sheet until browned and softened 

  • In a salad bowl assemble the salad leaves on the bottom and the rest of the ingredients on top. Drizzle with the dressing and serve.
