Ingredients
Bunch mixed salad leaves
1 chicken breast , halved and cooked in olive oil
Bunch cherry tomatoes
1 small can chickpeas drained
1/2 cup dried cranberries
1 avocado halved
1/2 cup mixed, toasted seeds- sunflower seeds, pumpkin seeds, sesame seeds
2 cups roasted pumpkin, cubed
For the dressing
1Tbs extra virgin olive oil
1 Tbs sesame oil
Juice of 1 lemon
1 Tsp maple syrup
1 Tsp dried oregano
Method
For the dressing , mix all the ingredients until well combined. Set aside
Half the chicken breast , season with salt and pepper and pan fry in a non stick pan until golden on the outside and cooked through. Let it cool and slice thinely
Chop the pumpkin in cubes and roast in a lined baking sheet until browned and softened
In a salad bowl assemble the salad leaves on the bottom and the rest of the ingredients on top. Drizzle with the dressing and serve.
