Baked Sweet & Sour Salmon

Ingredients
  • 9 tbsp tomato ketchup

  • 3 tbsp apple cider vinegar vinegar

  • 2 tbsp maple syrup

  • 2 garlic cloves crushed 

  • 4 skinless salmon fillets

  • 1 small onion,  roughly chopped

  • 2 red peppers, seeded and cut into chunks

  • 2 courgettes , sliced

  • 100g sugar snap peas, roughly sliced

  • Handful toasted sesame seeds

Method
  • In a large baking dish, mix the ketchup, vinegar, syrup and garlic thoroughly with the salmon, onion and peppers. Bake on medium  for 10-15 mins until the salmon is starting to cook and the sauce is sizzling.

  • Stir in the sugar snap peas and return to the oven for another 5 mins until the salmon is completely cooked. Leave to stand for a few minutes, then top with  sesame seeds, if using, and serve.
