Bean & Avocado Salad

Ingredients
250 g butter beans or cannellini beans ( canned or cooked)
1 avocado , sliced
1 red pepper , deseeded and quartered
1 cup cherry tomatoes , halved
Bunch thyme
Bunch salad leaves
1 garlic clove , crushed
2 tbsp extra virgin olive oil
Method
In a bowl mix the beans ,garlic and 1 tbs olive oil. stir until ingredients are combined.
In a baking tray place the peppers , cherry tomatoes rest of the olive oil and thyme. Season and roast till the vegetables soften. Let the vegetables cool completly before adding to the salad.
To assemble the salad place a bed of salad on a serving dish and add the rest of the ingredients. Use the juices from the roasted vegetables as a dressing
