Bean & Avocado Salad

Ingredients
  • 250 g butter beans or cannellini beans ( canned or cooked) 

  •  1 avocado , sliced

  • 1 red pepper , deseeded and quartered 

  • 1 cup cherry tomatoes , halved 

  • Bunch thyme

  • Bunch salad leaves 

  • 1 garlic clove , crushed

  • 2 tbsp extra virgin olive oil 

Method
  • In a bowl mix the beans ,garlic and 1 tbs olive oil. stir until ingredients are combined.

  • In a baking tray place the peppers , cherry tomatoes rest of the olive oil and thyme. Season and roast till the vegetables soften. Let the vegetables cool completly before adding to the salad.

  • To assemble the salad place a bed of salad on a serving dish and add the rest of the ingredients. Use the juices from the roasted vegetables as a dressing
