
Beef Stir Fry

Ingredients
250g beef fillet, finely sliced in strips
1 pkt sweet peas or mangetout trimmed at the edges
2 spring onion sliced
1 garlic clove finely chopped
Small piece of fresh ginger , peeled and grated
2 tablespoons ponzu sauce
1 tablespoon sesame oil
2 teaspoons sweet chili sauce
Method
Heat a wok over a high heat until hot. Add half the oil and, when it’s just smoking, add the beef and stir-fry until browned all over. Add the garlic and ginger and fry for a minute.
Add the sweet peas, ponzu, sesame oil and chili sauce to the wok and mix well. Cover with a lid (use kitchen foil if you don't have a suitable pan lid) and cook for 2 minutes, or until the peas are just tender (you don’t want to lose the bright green colour).
Scatter over the chilli and coriander and serve immediately with the drained rice.
Recipe Tips-You can swap the beef for veal or chicken, if preferred.
