Ingredients
Whole- grain old fashioned oats
Nuts and /or seeds
Unrefined oil eg: Coconut oil
Natural sweetner eg: maple syrup or honey
Spice- cinanamon, ground ginger, vanilla and mixed spice
Dried fruit eg: dried cranberries, dried cherries, raisins, dried apricot and dates
Optional Mix-Ins - orange zest, lemon zest and dark chocolate chocolate chips
Method
Mix all the chosen dry ingredients , except the Mix-ins with the wet ones until all the ingredients are combined.
Your oats need to be a little crowded in the baking dish so they can stick together, but not so crowded that they don’t toast evenly. Be sure to line the pan with parchment paper so the sweetener sticks to your oats rather than the pan.
Gently press down on the granola with the back of a spatula after pouring the mixture in the baking dish. Then put the pan into the oven.
Don’t bake the granola too long just until it’s lightly golden on top. It might not seem like it’s done yet, but it will continue to crisp up as it cools.
Let the granola cool completely before adding the optional mix- ins .
