Burrata & Fresh Broad Bean Salad

Ingredients
  • 250g Fresh Burrata or Mozarella di Bufola 

  • 2 Large tomatoes sliced

  • 1 Avocado sliced

  • 1/2 Cup fresh broad beans peeled

  • 1 Tbsp Minced sundried tomatoes

  • Handful roasted pinenuts 

For the dressing

  • 1/4 Cup extra virgin olive oil 

  • 1 Tsp dried mixed herbs

  • 1 Tbsp Balsamic vinegar

Method
  • In a salad platter place the sliced Tomatoes and the Burrata or Mozarella in the centre over the tomatoes.

  • Add all the rest of the ingredients around the cheese . Dress, season and sprinkle with pinenuts.
