Ingredients
250g Fresh Burrata or Mozarella di Bufola
2 Large tomatoes sliced
1 Avocado sliced
1/2 Cup fresh broad beans peeled
1 Tbsp Minced sundried tomatoes
Handful roasted pinenuts
For the dressing
1/4 Cup extra virgin olive oil
1 Tsp dried mixed herbs
1 Tbsp Balsamic vinegar
Method
In a salad platter place the sliced Tomatoes and the Burrata or Mozarella in the centre over the tomatoes.
Add all the rest of the ingredients around the cheese . Dress, season and sprinkle with pinenuts.
