Cherry Crumble Breakfast

Ingredients
  • 250g fresh cherries, pitted
    1 Tbs honey
    1 lemon, juiced
    ½ tsp vanilla extract

  • For the granola
    1 Tbs honey
    1 Tbs maple syrup
    100g rolled oats
    40g flaked almonds

  • 1 Tbs sunfloweroil
    Greek yoghurt, to serve

Method
  • Tip the cherries into a medium-sized ovenproof dish (around 28cm) and mix with the honey, lemon and vanilla. Set aside.

  • Heat the oven to 200C/180C fan/gas 4. Tip the rolled oats , nuts , maple syrup , honey and vegetable oil into a mixing bow and rub together with your fingertips to create a fine, breadcrumb-like mixture. Tip over the cherry mixture, then top with some extra almonds.

  • Bake the crumble in the centre of the oven for 30-35 mins or until the topping is golden brown. let it cool completly and serve with Greek Yoghurt.
