Ingredients
4 tablespoons olive oil
1/3 cup spring onions chopped
1 tablespoon garlic crushed
500g boneless skinless chicken breast cut into bite size pieces
1 teaspoon salt
1/4 teaspoon crushed red pepper flakes (optional)
1/3 cup water
1 can artichoke hearts drained or 4 fresh, cooked artichoke hearts
1 1/2 teaspoons pesto
400g pasta
1/2 cup grated Parmesaan
Method
Heat olive oil, onions, and garlic in a large skillet. Add chicken, salt, and red pepper flakes. Cook until chicken is cooked through. Add water and scrape the bottom of the skillet. Add artichoke hearts, grated cheese and pesto. Let reduce (cook 3- 5 minutes until half as thick). Add the cooked pasta as per packet instructions . Serve with green onions, red pepper flakes, and a sprinkle parmesan cheese.
