
Chicken Shepard's Pie

Ingredients
2 skinless chicken breasts
1/2 L chicken stock, lowsodium jelly or homemade
3 large carrots, finely chopped
8 mushrooms or marrows, finely
chopped
2 ribs celery, finely chopped
1 leek finely chopped
1 tbsp minced parsley
2 tsp fresh thyme
1/2 tsp finely grated lemon zest
Freshly ground black pepper
3 potatoes or sweet potatoes boiled and mashed
2 tbsp olive oil
1 small jar good quality tomato sauce

Method
Peel, chop and boil potatoes until tender Drain, then mash potatoes Add some grated parmesan and season Set aside.
Stirfry chicken evenly in olive oil, and any desired spices including paprik. Set aside and repeat process with all the vegetables. Place the chicken in a casserole dish, then layer the vegetables over the chicken and top with tomato sauce and stock.
Finally spread mashed potatoes over all the cooked ingredients sealing everything.
Bake at 350 degrees F 175 degrees C) for 25 minutes or until
brown around edges.
Serve warm with a side dish of vegetables or salad.
