Chili & Ginger Stir Fry

Ingredients
  • 350g free range chicken breast cut in strips

  • 1 red pepper finely sliced

  • 10 asparagus halved lengthwise

  • 2 spring onions fiely sliced

  • 1 garlic clove minced

  • 1 tsp minced ginger

  • 1 tbsp sweet chili sauce

  • 1 tbsp sesame oil

  • Juice of 1 lime

  • Bunch coriander finely chopped

  • 1 tsp toasted sesame seeds for garnish

Method
  • Stir fry the chicken in sesame oil until browned on the outside and cooked through.Set aside.

  • Cook the rest of the ingredients. when the vegetables are slightly softened , add the chicken and wet ingredients. Stir to mix all the ingredients well. 

  • Serve hot with finely chopped coriander and toasted sesame seeds.
