Ingredients
Bunch Mixed Salad
250g cooked or tinned chickpeas
1 avocado , sliced
1 colored peppered , sliced
1 hard boiled egg
50g roasted almonds
1/2 a cucumber, sliced
1 small red onion , finely sliced
1 cup sliced red cabbage
1 cup cherry tomatoes , halved
1/2 cup mixed roasted seeds
2 tbsp extra virgin olive oil
Juice of 1/2 a lime
Method
To assamble the poke, place all the ingredients on a bed of mixed salad. Top with roasted seeds. Dress and season before serving.
