
Duck Salad with Plum & Chili Sauce

Ingredients
For the duck
1 duck breast, skin on
For the dressing
1/2 cup plum sauce
1/2 cup sweet chilli sauce
½ red chilli, finely chopped
2 tbsp sesame oil
1 garlic clove finely chopped
1 tbsp, soy sauce mixed with 1 tsp water
salt and freshly ground black pepper
Bunch fresh coriander finely chopped
For The salad
1 mango, cubed
1 spring onion , sliced
Handful sesame seeds toasted
Bunch coriander , roughly chopped
Bunch mixed salad leaves
Method
Preheat the oven to 200C/400F/Gas 6.
For the duck, place the duck skin-side down in a non-stick ovenproof pan. Gradually bring up to a medium heat and fry the duck, draining off the excess fat into a bowl as it's released. Once the fat has rendered and is crisp, turn the duck over and cook on the other side for 2-3 minutes, or until golden-brown.
Transfer the pan to the oven and cook for 8-10 minutes, or until the duck is cooked to your liking.
Meanwhile, for the plum dressing. Add all the ingredients in a pan and bring to the boil. over low heat Stir frequently to dissolve the sauces together. when the liquid has thickened , remove from the heat and set aside to cool completely. Season, to taste, with salt and freshly ground black pepper.
To serve , place the lettuce , coriander, mango and spring onion in a serving bowl. Add the duck , pour over the dressing and sprinkle with sesame seeds.
