Duck Salad with Plum & Chili Sauce

Ingredients

For the duck

  • 1 duck breast, skin on

For the dressing

  • 1/2 cup plum sauce

  • 1/2 cup sweet chilli sauce

  • ½ red chilli, finely chopped

  • 2 tbsp sesame oil

  • 1 garlic clove finely chopped

  • 1 tbsp, soy sauce mixed with 1 tsp water

  • salt and freshly ground black pepper

  • Bunch fresh coriander finely chopped

For The salad

  • 1 mango, cubed

  • 1 spring onion , sliced

  • Handful sesame seeds toasted

  • Bunch coriander , roughly chopped

  • Bunch mixed salad leaves 

Method
  • Preheat the oven to 200C/400F/Gas 6.

  • For the duck, place the duck skin-side down in a non-stick ovenproof pan. Gradually bring up to a medium heat and fry the duck, draining off the excess fat into a bowl as it's released. Once the fat has rendered and is crisp, turn the duck over and cook on the other side for 2-3 minutes, or until golden-brown.

  • Transfer the pan to the oven and cook for 8-10 minutes, or until the duck is cooked to your liking.

  • Meanwhile, for the plum dressing. Add all the ingredients in a pan and bring to the boil. over low heat Stir frequently to dissolve the sauces together. when the liquid has thickened , remove from the heat and set aside to cool completely.  Season, to taste, with salt and freshly ground black pepper.

  • To serve , place the lettuce , coriander, mango and spring onion in a serving bowl. Add the duck , pour over the dressing and sprinkle with sesame seeds.
