Easiest Ever Seafood Pasta

Ingredients
  • 1 tbsp olive oil

  • 1 leek or onion, sliced

  • Handful black olives, pitted & chopped

  • 1 tsp tomato paste

  • 300g pasta

  • 1 mug hot fish or chicken stock

  • 200g fresh or frozen spinach

  • 2 plum tomatoes quartered 

  • 400g frozen seafood mix, defrosted

Method
  • Heat the oil in a deep pan, then soften the leek for 5 mins without browning. Add the olives, tomatoes and fry until it releases its oils. Tip in the spinach and cook for 5 mins, then stir in the seafood and tomato paste to heat through for a final 1-2 mins cooking or until the pasta is cooked as per packet instructions. Check for seasoning and serve immediately with lemon wedges.
