Easiest Ever Seafood Pasta

Ingredients
1 tbsp olive oil
1 leek or onion, sliced
Handful black olives, pitted & chopped
1 tsp tomato paste
300g pasta
1 mug hot fish or chicken stock
200g fresh or frozen spinach
2 plum tomatoes quartered
400g frozen seafood mix, defrosted
Method
Heat the oil in a deep pan, then soften the leek for 5 mins without browning. Add the olives, tomatoes and fry until it releases its oils. Tip in the spinach and cook for 5 mins, then stir in the seafood and tomato paste to heat through for a final 1-2 mins cooking or until the pasta is cooked as per packet instructions. Check for seasoning and serve immediately with lemon wedges.
