Ingredients
  • 1 1/2 tablespoons minced garlic

  • 1/3 cup extra-virgin olive oil, divided

  • 6 plum tomatoes , quartered lengthwise

  • 1 large red onion, finely sliced

  • 400g pasta

  • 1/3 cup grated parmesan or crumbled ricotta

  • 1/2 cup coarsely chopped basil

Method
  • Cook the diced garlic on low heat.Coarsely chop tomatoes and add to garlic oil with sliced onion and basil. Mix well till all the ingredients are combined.

  • Cook pasta in a pot of well-salted boiling water until al dente , then drain pasta. Toss with tomato mixture , parmesan or ricotta and salt and pepper to taste.
