Ingredients
1 1/2 tablespoons minced garlic
1/3 cup extra-virgin olive oil, divided
6 plum tomatoes , quartered lengthwise
1 large red onion, finely sliced
400g pasta
1/3 cup grated parmesan or crumbled ricotta
1/2 cup coarsely chopped basil
Method
Cook the diced garlic on low heat.Coarsely chop tomatoes and add to garlic oil with sliced onion and basil. Mix well till all the ingredients are combined.
Cook pasta in a pot of well-salted boiling water until al dente , then drain pasta. Toss with tomato mixture , parmesan or ricotta and salt and pepper to taste.
