Ingredients
1 chicken breast , halved , grilled and sliced
1/2 cup black olives, pitted
1/2 cucumber sliced
150g quinoa cooked
100g feta cheese crumbled
1 cup cherry tomatoes halved
4 tbsp tzaziki
1/2 lemon
olive oil
Method
For the dressing mix the lemon juice with olive oil.
For the salad , place all the other ingredients on a bed of quinoa. Dress and season.
Serve with tzaziki .
