Ingredients
180g whole wheat pasta
1 cup cooked spinach
1/2 cup ready to use chickpeas
80g feta cheese crumbled
5 sundried tomatoes , finely chopped
olive oil
1/2 lemon zest , finely grated
Small bunch parsley finely grated
1 tbsp grated cheese (Grana or parmesan)
Method
Cook the pasta as per packet instructions.
Slightly cook the spinach, chickpeas, tomatoes and feta in a pan over low heat heat . Add the cooked pasta and stir until all the ingredient are combined.
To serve sprinkle lemon zest, parsley and grated cheese.
