Ingredients
  • 180g whole wheat pasta

  • 1 cup cooked spinach

  • 1/2 cup ready to use chickpeas

  • 80g feta cheese crumbled

  • 5 sundried tomatoes , finely chopped

  • olive oil

  • 1/2 lemon zest , finely grated 

  • Small bunch parsley finely grated

  • 1 tbsp grated cheese (Grana or parmesan)

Method
  • Cook the pasta as per packet instructions. 

  • Slightly cook the spinach, chickpeas, tomatoes and feta in a pan over low heat heat . Add the cooked pasta and stir until all the ingredient are combined.

  • To serve sprinkle lemon zest, parsley and grated cheese.
