Healthy Tea Time Open Sandwiches

Ingredients
  • 4 slices country brown bread tasted

  • 1 tbsp tzaziki 

  • 2 thin slices cucumber ( cut length wise)

  • 4 cherry tomatoes halved

  • Bunch basil leaves 

  • 2 slices mozzarella 

  • 1 avocado mashed with salt and pepper

  • 1 tsp pumkin seeds toasted

  • 1 tsp soft goat's cheese

  • 1/2 white onion thinly sliced 

  • 2 slices smoked salmon 

  • 1/2 lemon juice 

  • Olive oil

Method
  1. Spread tzaziki on the toasted bread and top with sliced cucumber.

  2. Place the mozzarella , tomatoes and basil on the toasted bread . Season and drizzle with olive oil.

  3. Spread the toasted bread with mashed avocado , squeeze fresh lemon juice , drizzle olive oil and top with pumpkin seeds.

  4. Spread the toasted bread with goat's cheese . Top with smoked salmon and onion slices. Drizzle with lemon juice.
