Ingredients
4 slices grainy brown bread
100g Cottage cheese or ricotta
1 avocado, sliced
1 cup cherry tomatoes or 2 plum tomatoes, sliced
Handful fresh basil , finely chopped
Handful dill , finely chopped
Drizzle extra virgin olive oil
Method
Toast the bread and drizzle olive oil.
Meanwhile mix the cheese with the herbs until combined. Spread over the toasted bread and top with slices of avocado and tomatoes.
Season with salt and pepper and enjoy.
