Ingredients
  • 4 slices grainy brown  bread 

  • 100g Cottage cheese or ricotta

  • 1 avocado, sliced

  • 1 cup cherry tomatoes or 2 plum tomatoes, sliced

  • Handful fresh basil , finely chopped 

  • Handful dill , finely chopped 

  • Drizzle extra virgin olive oil 

Method
  • Toast the bread and drizzle olive oil.

  • Meanwhile mix the cheese with the herbs until combined. Spread over the toasted bread and top with slices of avocado and tomatoes.

  • Season with salt and pepper and enjoy.
