Japanese Summer Salad

Ingredients
150g Cooked Soba noodles in broth
150g cooked prawns
2 tomatoes cut in chunks
1 cup sweet corn
1/2 cucumber cut in strips
2 spring onions sliced
bamboo shoots sliced (optional)
2 Tbsp sesame oil
1 Tbsp soy sauce
1/2 lime juice only
Handful toasted sesame seeds
Dried chili flakes for serving
Method
Cook the Soba noodles as per packet instructions. Set aside to cool.
For the prawns , marinade them in sesame oil and grill them for 1 min or use the precooked frozen packets.
For the dressing mix the lime, sesame oil and soy in a glass bowl and set aside.
Assemble the salad by placing the rest of the ingredients on a bed of noodles.
Pour over the dressing and serve with dried chillies on the side
