Japanese Summer Salad

Ingredients
  • 150g Cooked Soba noodles in broth

  • 150g cooked prawns

  • 2 tomatoes cut in chunks

  • 1 cup sweet corn

  • 1/2 cucumber cut in strips

  • 2 spring onions sliced

  • bamboo shoots sliced (optional)

  • 2 Tbsp sesame oil

  • 1 Tbsp soy sauce

  • 1/2 lime juice only

  • Handful toasted sesame seeds 

  • Dried chili flakes for serving

Method
  • Cook the Soba noodles as per packet instructions. Set aside to cool.

  •  For the prawns , marinade them in sesame oil and grill them for 1 min or use the precooked frozen packets.

  • For the dressing mix the lime, sesame oil and soy in a glass bowl and set aside.

  • Assemble the salad by placing the rest of the ingredients on a bed of noodles. 

  • Pour over the dressing and serve with dried chillies on the side
