Keto Cobb Salad

Ingredients
  • Romaine lettuce 

  • 2 hard boiled eggs 

  • 4 back bacon slices, chopped finely

  • 2 tomatoes, halved

  • 1 onion finely sliced

  • 1 avocado sliced

  • 50 g stilton cheese, crumbled

  • 1 chicken breast, halved

  • Bunch parsley finely chopped

For the dressing

  • 1 tsp dijon mustard

  • 2 tbsp olive oil

  • Juice of 1/2 lemon 

Method
  • To make the dressing , mix the ingredients until well combined and set aside . 

  • Meanwhile cook the bacon on high heat in a dry pan until crispy. Remove the bacon and set on a paper towel to remove access fat.

  • Cook the chicken breast in the leftover bacon juices until crisp on the outside and cook through inside. 

  • To assemble the salad place all the ingredients on a salad platter or chopping board, season and dress.
