Ingredients
Romaine lettuce
2 hard boiled eggs
4 back bacon slices, chopped finely
2 tomatoes, halved
1 onion finely sliced
1 avocado sliced
50 g stilton cheese, crumbled
1 chicken breast, halved
Bunch parsley finely chopped
For the dressing
1 tsp dijon mustard
2 tbsp olive oil
Juice of 1/2 lemon
Method
To make the dressing , mix the ingredients until well combined and set aside .
Meanwhile cook the bacon on high heat in a dry pan until crispy. Remove the bacon and set on a paper towel to remove access fat.
Cook the chicken breast in the leftover bacon juices until crisp on the outside and cook through inside.
To assemble the salad place all the ingredients on a salad platter or chopping board, season and dress.
