Ingredients

For the cherry compote

  • 500g cherries, pitted, fresh or frozen

  • 50g brown sugar

  • 1 lemon, juice only

  • 2 tsp honey

  • 1/2 tsp vanilla extract (optional)

For the oats

  • 2 tubs plain Greek yoghurt

  • 1 cup rolled oats

  • 1 cup roasted mixed nuts

Method
  • Put the cherries in a saucepan with the sugar, lemon juice, honey vanilla and 300ml water. Heat slowly, stirring constantly, until the sugar has dissolved, then simmer for around 10 minutes until the cherries are slightly softened and the syrup has thickened.

  • In a serving cup , layer oats, nuts , yoghurt and cherry compote twice over.

  • Serve right away or let it set for some hours or overnight.
