Left Over Chicken Salad

Ingredients
Left over chicken breast , cooked and cubed
1 avocado, peeled and cubed
2 tomatoes , cubed
1 hard boiled egg cubed
Bunch lettuce , iceberg or mixed salad leaves
1 /2 cucumber , cubed
2 rashers cooked bacon, chopped finely
For the dressing
Olive oil
1 tsp dijon mustard
1/2 lime juice
Fresh coriander , finely chopped
Method
For the dressing , stir the olive oil, mustard , lime juice and coriander until combined. Set aside.
Meanwhile assemble the salad by mixing all the ingredients in a large bowl. For this salad it would be ideal if all the ingredients are chopped approximately in the same size - bite size.
Serve the salad into individual bowls and dress.
