Lime & Coconut Energy Balls

Ingredients
  • 220g Dates

  • 150g Cashews or Almonds

  • 2 Limes- 1 tsp zest and 2 tbsp juice

  • 66g unsweetened shredded ( desiccated) coconut

Method
  • Grate lime zest in a bowl , add the lime juice and mix. 

  • Place the nuts in a food processor and mix until broken down into a coarse , grainy flour. A few larger pieces are ok.

  • Add dates and process until forming a crumbly but sticky dough.

  • Add coconut , lime and process until your mixture sticks together when pressed between your fingers.

  • Use your hands to roll the mixture into 15 balls.
