Lime & Coconut Energy Balls

Ingredients
220g Dates
150g Cashews or Almonds
2 Limes- 1 tsp zest and 2 tbsp juice
66g unsweetened shredded ( desiccated) coconut
Method
Grate lime zest in a bowl , add the lime juice and mix.
Place the nuts in a food processor and mix until broken down into a coarse , grainy flour. A few larger pieces are ok.
Add dates and process until forming a crumbly but sticky dough.
Add coconut , lime and process until your mixture sticks together when pressed between your fingers.
Use your hands to roll the mixture into 15 balls.
