Omelet with Spinach

Ingredients
4 free range eggs, beaten
1 cup cooked spinach
2 tbsp grated Parmesan
100g mozarella shredded
Salt and freshly ground black pepper
Olive oil
Method
In a bowl mix the spinach and cheese to the beaten eggs.
Heat the oil in a hot pan , pour the egg mixture and cook until golden. Flip the omelet and brown the other side on low heat until the eggs are cooked through.
Season and serve right away.
