Omelet with Spinach

Ingredients
  • 4 free range eggs, beaten

  • 1 cup cooked spinach

  • 2 tbsp grated Parmesan

  • 100g mozarella shredded

  • Salt and freshly ground black pepper

  • Olive oil

Method
  • In a bowl mix the spinach and cheese to the beaten eggs. 

  • Heat the oil in a hot pan , pour the egg mixture and cook until golden. Flip the omelet and brown the other side on low heat until the eggs are cooked through.

  • Season and serve right away.
