Pesto & kale Pasta

Ingredients
  • 1 tbsp olive oil

  • 1 cup cherry tomatoes , halved

  • 1 avocado, chopped in small cubes

  • 2 tbs toasted pine nuts 

  • 300g kale, roughly chopped and cooked in olive oil 

  • 300g pasta, penne work well

  • 1/2 a burrata

  • 4 tbsp fresh or jar pesto

Method
  • Heat the oil in a large pan over a medium heat. Add the kale and 100ml water, then cover and cook for 5 mins or until the kale has wilted.

  • Cook the pasta following pack instructions. Drain, reserving a little of the cooking water. Toss the pasta with the kale , burrata and pesto, adding a splash of the reserved cooking water to loosen, if needed. Season and layer the pasta with tomatoes, avocado and pine nuts .
