Ingredients
  • 6 free range eggs , beaten

  • 2 slices french ham finely chopped

  • chives finely chopped

  • 50 g comte grated 

  • Salt and freshly ground black pepper

  • 2 tomatoes sliced 

  • olive oil

Method
  • Add the ham, cheese and chives to the beaten eggs. Season and set aside.

  • Heat some olive oil in a hot pan , pour the egg mixture and cook until golden. Flip over and cook the other side. 

  • Serve with sliced tomatoes
