Ingredients
Mixed salad leaves
2 avocados sliced
1 cup pitted black olives
1 jar/can chickpeas
1/2 a small red cabbage shredded
1 cucumber diced
1 small red onion finely sliced
1 tablespoon extra virgin olive oil
1/2 a lime juice
1 table spoon mixed seeds
Bunch coriander leaves finely chopped
Method
To make the dressing mix the oil, lime juice and coriander. Set aside
Place the rest of the ingredients in a salad bowl, add the dressing and toss well till all the ingredients are infused with the dressing.
Top with mixed seeds and serve with a side of cooked edemame.
