Quinoa & Avocado Salad

Ingredients

100g black olives, finely chopped
juice 1 lime
2 tbsp extra virgin olive oil

1 cup mixed fresh mint, parsley and coriander, leaves only, chopped
½ a red onion, finely chopped
250g pack ready to eat quinoa
1 avocado, stoned, peeled and chopped into chunks
1/2 chili deseeded and finely chopped


Method
  • Pour the lime juice into a small bowl and whisk in some seasoning. Keep whisking as you slowly add the olive oil, followed by the fresh herbs.

  • Tip the onions, chili and olives into a large serving dish. Stir in the quinoa, breaking up any clumps. Pour over the dressing, then fold in the avocado and serve immediately or pack in a lunchbox.
