
Quinoa Salad With Grilled Vegetables

Ingredients
•200g Quinoa, cooked
•1 Zucchini, halved & grilled
•1 Radish sliced ( optional)
•1 spring onion , finely sliced
•Buch fresh basil roughly chopped
•100g Halloumi sliced & grilled
•1 Tbs pine nuts toasted
•1 peach sliced
•1 Tbs extra virgin olive oil
•1 tsp Dijon mustard
•½ tsp honey
•Bunch mixed salad or baby spinach
Method
FOR THE SALAD: Place the cooked quinoa at the bottom of a salad bowl . Assemble the rest of the ingredients on top. Drizzle the dressing and toss.
MAKE THE DRESSING: Mix olive oil , mustard , honey and basil leaves stir until well combined. Season with salt and freshly ground pepper. Tip into a large salad bowl.
OPTIONAL: Tear in prosciutto or add ricotta instead of the halloumi and toss everything together. Pile into bowls or pack in a lunch box.
