
Rice Cakes with Different Toppings

Ingredients
6 rice cakes
1 avocado
1 slice grilled zucchini
1 slice smoked salmon
1 tbs tzatziki
handful thinly sliced salad leaves or cabbage
1 tbsp hummus mixed with a pinch of harrissa
1/2 a pepper finely sliced
handful black olives
1/2 onion sliced
1 slice Parma ham
Basil
3 cherry tomatoes
2 slices turkey
1 tsp soft goat's cheese
few pomegranate seeds
1 slice bresaola
1/2 a hard boiled egg
Method
Crush the avocado into a paste and season. Spread the rice cake and top with grilled zucchini.
Spread the rice cake with tzatziki , top with salad or cabbage and place the salmon over.
Spread the rice cake with hummus and harrissa and top with peppers, onions and olives.
Top the rice cake with Parma ham, basil and cherry tomatoes. Season with freshly ground black pepper.
Spread the rice cake with goat's cheese and top with turkey. Season and sprinkle with pomegranate seeds.
Top the rice cake with breasola and egg . Season and top with onions.
