Rice Salad with Pesto and Tuna

Ingredients
  • 200g Rice cooked 

  • 2 tbsp good quality pesto

  • 1 cup cherry tomatoes , halved

  • 1/2 cup chick peas

  • 1/2 cup sweet corn

  • 1 jar tuna in olive oil, strained

  • 1/2 lemon

  • Olive oil

  • Bunch fresh basil finely chopped

Method
  • For the dressing , mix the pesto, lemon juice and some olive oil. Stir until smooth and watery. 

  • For the salad, mix the the tuna, chickpeas, tomatoes, sweet corn and basil in a salad bowl . Add the pasta and dressing and stir until all the ingredients are well combined. 

  • Serve as a meal or with a hard boiled egg in a lunch box.
