Roasted Green Vegetables & Mozzarella Balls

Ingredients

1 broccoli head, cut into florets
200g green beans, trimmed and halved
1/2 a cabbage,  cut into chunks
2 cougettes,  diced
1 leek,  cut into thin wedges
200g mozzarella balls
3 garlic cloves, crushed
3 tbsp olive oil

2 tbsp toasted mixed seeds


Method
  • Heat the oven to 200C/180C fan/gas 6. Tip the broccoli, leeks, cabbage, courgettes, onion and garlic  into a bowl and add the olive oil along with plenty of salt and pepper. Toss well, then tip onto a large baking tray or two smaller trays, ensuring everything is in an even layer.

  • Put in the oven and roast for 35-40 mins, tossing halfway, until cooked through and lightly caramelised. Serve topped with toasted seeds and scattered mozzarella balls.
