Salad with Apricots & Goat's Cheese

Ingredients
  • 4 apricots, destoned and halved

  • Olive oil

  • 100g soft goat's cheese , sut in thick pieces

  • 1/2 cup toasted walnuts , crushed

  • Bunch rocket leaves 

  • 1 avocado , sliced

  • 1tsp honey

  • bunch coriander roughly chopped

  • 1/2 lemon juiced

  • pinch dried oregano

Method
  • For the dressing , mix olive oil, honey and lemon juice and set aside.

  • Heat a griddle pan (or barbecue) until hot. Lightly brush the apricots with oil and place cut-side down on the hot griddle. Cook for about 2 minutes, turning once to get a nice chargrilled mark. Transfer to a tray and set aside.

  • To assemble the salad place the apricots, avocado and cheese on a bed of rocket leaves.  Pour the dressing and sprinkle with coriander , oregano and walnuts .
