Ingredients
  • Kale leaves cooked in olive oil

  • 1 cup cherry tomatoes

  • 2 radishes or 1 onion finely sliced

  • 1/4 cup walnuts or pecans 

  • Bunch basil

  • 1 can butter beans , rinsed and drained

  • 1 avocado sliced

  • 1 jar tuna in olive oil

  • 1 tsp dijon mustard

  • 1 tsp apple cider vinegar

  • Extra virgin olive oil

Method
  • For the dressing , mix the mustard , olive oil and vinegar. 

  • To assemble the platter divide all the rest of the ingredients in two serving plates . Season with salt and pepper and pour the dressing all over the salad.

  • Top with crushed, toasted walnuts.
