Ingredients
4 skinless, chicken breasts
1½ tbsp maple syrup
1½ tsp paprika
1 tsp dried thyme
1 tsp dried oregano
2 garlic cloves, crushed
½ tsp sea salt
Mixed sauteed veg, to serve (cooked in olive or sesame oil)
Method
Heat the oven to 180C/160C fan/gas 4. Arrange the chicken breasts in a baking tray or dish lined with baking parchment. Combine the maple syrup, spices, herbs, garlic, salt and ½ tsp freshly ground black pepper, then spoon a quarter of the spice mix over each chicken breast and rub it all over the meat.
Bake the chicken breasts for 25-30 mins until cooked through , the spice mix coating will darken and the syrup will caramelise.
Serve the chicken with mixed, sauteed vegetables , like carrots, peas, broccoli, spinach , peppers and onions . Cook the vegetables roasted in the oven or sauteed on the stove in olive or sesame oil.
