Teriyaki Salmon Poke Bowl

Ingredients
  • 1/2 a cucumber sliced

  • 1 avocado sliced

  • 150g basmati rice cooked

  • 1 mango sliced 

  • 1 cup edemame beans cooked

  • 1/2 red cabbage thinly sliced

  • 1 pepper cubed 

  • some pickled ginger 

  • 3 anchovie fillets(optional)

  • 300g salmon fillets baked in Teriyaki sauce

  • sesame oil

  • 1/2 lime or lemon

Method
  • For the salmon , place the fillets on baking paper and cover with Teriyaki sauce. Bake for 10 min in moderate heat.

  • Cook the rice as per packet instructions and roll in balls or lay on a serving dish. 

  • Assemble the rest of the ingredients over the rice

  • Dress with lemon or lime and a drizzle of sesame oil
