Teriyaki Salmon Poke Bowl

Ingredients
1/2 a cucumber sliced
1 avocado sliced
150g basmati rice cooked
1 mango sliced
1 cup edemame beans cooked
1/2 red cabbage thinly sliced
1 pepper cubed
some pickled ginger
3 anchovie fillets(optional)
300g salmon fillets baked in Teriyaki sauce
sesame oil
1/2 lime or lemon
Method
For the salmon , place the fillets on baking paper and cover with Teriyaki sauce. Bake for 10 min in moderate heat.
Cook the rice as per packet instructions and roll in balls or lay on a serving dish.
Assemble the rest of the ingredients over the rice
Dress with lemon or lime and a drizzle of sesame oil
