Veal Shepard's pie

Ingredients
  • 790g minced veal

  • 1L chicken stock, low-sodium jelly or homemade

  • 3 large carrots, finely chopped

  • 8 mushrooms , finely chopped

  • 2 ribs celery, finely chopped

  • 1 leek finely chopped

  • 1 tbsp minced parsley

  • 2 tsp fresh thyme

  • 1/2 tsp finely grated lemon zest

  • Freshly ground black pepper

  • Olive oil 

  • 3 potatoes or sweet potatoes boiled and mashed

  • 1/2 tsp Paprika

Method
  • Peel, chop and boil potatoes until tender. Drain, then mash potatoes. Add some grated parmesan and season. Set aside.

  • Pan fry veal mince evenly in olive oil, and paprika. Set aside and repeat process with all the vegetables. 

  • Place the veal in a casserole dish, then layer the vegetables on top. Finally spread mashed potatoes over all the cooked ingredients sealing everything.

  • Bake at 350 degrees F (175 degrees C) for 25 minutes or until brown around edges.
