Ingredients
790g minced veal
1L chicken stock, low-sodium jelly or homemade
3 large carrots, finely chopped
8 mushrooms , finely chopped
2 ribs celery, finely chopped
1 leek finely chopped
1 tbsp minced parsley
2 tsp fresh thyme
1/2 tsp finely grated lemon zest
Freshly ground black pepper
Olive oil
3 potatoes or sweet potatoes boiled and mashed
1/2 tsp Paprika
Method
Peel, chop and boil potatoes until tender. Drain, then mash potatoes. Add some grated parmesan and season. Set aside.
Pan fry veal mince evenly in olive oil, and paprika. Set aside and repeat process with all the vegetables.
Place the veal in a casserole dish, then layer the vegetables on top. Finally spread mashed potatoes over all the cooked ingredients sealing everything.
Bake at 350 degrees F (175 degrees C) for 25 minutes or until brown around edges.
