Vegan Quinoa Salad

Ingredients
150g cooked quinoa
1 avocado sliced
1 small beetroot finely sliced
1 carrot finely sliced lengthwise
1 large can chickpeas rinsed and drained
1 cucumber sliced
Bunch baby spinach
Bunch basil roughly chopped
Olive oil
1/2 lemon juice
1/4 cup toasted sesame seeds
Method
In two serving plates, assemble all the ingredients over a bed of quinoa.
For the dressing , mix the olive oil and lemon juice and pour over the salad. Top with toasted sesame seeds and serve.
