Vegan Quinoa Salad

Ingredients
  • 150g cooked quinoa

  • 1 avocado sliced

  • 1 small beetroot finely sliced

  • 1 carrot finely sliced lengthwise

  • 1 large can chickpeas rinsed and drained

  • 1 cucumber sliced

  • Bunch baby spinach 

  • Bunch basil roughly chopped

  • Olive oil

  • 1/2 lemon juice

  • 1/4 cup toasted sesame seeds 

Method
  • In two serving plates, assemble all the ingredients over a bed of quinoa.

  • For the dressing , mix the olive oil and lemon juice and pour over the salad. Top with toasted sesame seeds and serve.
