Vietnamese Beef Carpaccio

Ingredients

For the sauce

  • 50-75ml rice vinegar, to taste

  • 1 tsp sesame oil

  • 25g brown sugar, to taste

  • 1 stick lemongrass , trimmed and very finely chopped

  • 1 garlic clove, finely chopped

  • 1 lime, juice only

For the beef

  • 400g fresh fillet of beef , sliced thinly

  • 1/4 cup mixed toasted peanuts and walnuts, crushed

  • Handful rocket leaves

Method
  • For the dressing , mix all the ingredients in a glass bowl and set aside.

  • Place the meat in a serving plate . Add rocket leaves and nuts over the meat.

  • Pour the dressing over the beef and serve with side salad or a baked potato.
