Vietnamese Beef Carpaccio

Ingredients
For the sauce
50-75ml rice vinegar, to taste
1 tsp sesame oil
25g brown sugar, to taste
1 stick lemongrass , trimmed and very finely chopped
1 garlic clove, finely chopped
1 lime, juice only
For the beef
400g fresh fillet of beef , sliced thinly
1/4 cup mixed toasted peanuts and walnuts, crushed
Handful rocket leaves
Method
For the dressing , mix all the ingredients in a glass bowl and set aside.
Place the meat in a serving plate . Add rocket leaves and nuts over the meat.
Pour the dressing over the beef and serve with side salad or a baked potato.
